Adventures Update

Recap:

My 3 goals/adventures that I am taking on for the summer are: 1) to train for a marathon, 2) to lose inhibitions in Italy, and 3) to learn to cook. I blogged these goals to hold myself accountable for them; therefore, I should probably update the blogosphere on the progress (or lack thereof) I'm actually making.

1) Training for a marathon. This adventure has morphed into something slightly different but, never fear, it's still tied to exercise. : /

I can't believe I actually just used a" : / " face.

While training for a marathon at first seemed ideal, after some thought I realized it may not be entirely feasible. Um, hello Alex...the whole month of July you will be in a foreign country where it is probably unsafe to run alone. That's assuming I would even have the desire to run when I'm there, which is unlikely.

SO, two of my best friends (Mallory and Kelsey), my dad, and myself have taken on another adventure: Free Wheel 2010! This sounds/looks a lot more intense than it actually is because we are not doing the full distance. We will only be riding one day totaling 50 miles. Since my goal has shifted, I have been riding and running each day. I guess you call it cross-training. It's not exactly what I had in mind, but it's much more realistic for this summer.

2) Lose inhibitions in Italy. This goal is TBA with July posts!

3) Learn to cook.
I'm struggling with this one the most. Mainly because I do not have the desire to cook anything that doesn't sound or look delicious at the time of hearing the recipe. Thus, I have only made cake with fondant and homemade salsa and quesadillas so far.

Furthermore, I somehow have developed the idea that I am Tahlequah's very own food critic and have managed to eat at nearly every restaurant in the surrounding area this summer. I know the places that offer greasy fries, the best salsa, and the sweetest tea. Let's just say that this is not great for my pocketbook OR my tummy.

I need recipes or just some places to get recipes. Help?

  1. I have a new assignment for you! Read Eat Pray Love, you will realize that running/doing anything possibly aerobic is not going to happen! haha plus it is just really good! Love you!

  2. My favorite current recipee: (Warning... It's HEALTHY! Hahaha, but it's sweet too- you can't help but love it)
    It's a salad- use spinach leaves or field greens!
    Thin strawberry slices, feta cheese, toasted almond slices, poppyseed dressing! yumm.
    I introduced it to some people here and it's made it all the way to Florida and Ardmore, next stop Tahlequah?

  3. Hey Alex! My current fav dinner dish is stirfry. cube one package of chicken breast. Cook the chicken on a skillet with plenty of teriaki sauce to taste and a little olive oil. Then add your fav. veggies. Fresh are better, but I use a bag of frozen broccoli, and an Asia medly mix. Saute the veggies. Mix with the chicken. And in less than 30 minutes you have a healthy dinner. I like it because you can always change it up. Oh for extra flavors I add fresh garlic, roasted red peppers and Greek seasoning. I have not attempted to make rice to go with it. I just put the stirfry over a bed of Ramen noodles. SAHTEIN-Arabic for Bon Apetite!

  4. Easy and delicious!

    Ritz Chicken

    3-4 chicken breasts
    1 sleeve of Ritz crackers
    1 tablespoon lemon juice
    1/4 cup parmesean cheese
    1/4 cup ranch

    Preheat oven to 400 degrees.
    Crush the Ritz crackers. To do this, I place the sleeve in a gallon baggie and stomp on it til it is good and crushed :)
    Combine the Ritz crackers and parmesean cheese in a bowl. In a separate bowl combine the lemon juice and ranch.
    Cut 3 or 4 chicken breats into bite size pieces.
    Coat the chicken in the ranch mixture and then coat well in the cracker mixture.
    Place on baking sheet and bake for approx 18 minutes at 400.

    We eat them with mac-n-cheese.

  6. I love your one about losing inhibitions in Italy. Girlfriend-I was just like you when I went over there--and it just happens. It's so incredibly magical...I was so attached to Florence by the time I had to leave. I am so excited for you that you are about to have that amazing adventure. Please go to Cinque Terre one weekend if you ever can..the views on the water are unlike anything I've ever seen.
